Super Moist Black Bean Brownies


For those that know me really well, I love chocolate…..especially brownies. Therefore I made it my mission to create a healthy brownie that is moist and nutritious. Personally I found that a lot of brownie recipes that uses black beans resulted in a dense texture that tasted like cardboard. I wanted a recipe that could stand up to a regular sugar-and-flour brownie in a competition.

And these really do!

Ingredients
  • 1 can black beans drained
  • 1/2 tsp oil
  • 1/2 cup cocoa powder
  • 1/2 tsp chili powder
  • 1 tbsp chia seeds optional
  • 1 tsp stevia
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 2 eggs
  • 1 cup bitersweet chocolate chips (divided) can use semi sweet
  • 1 tbsp unsweetened almond milk can use skim or 1% milk
  • 1 tsp balsamic vinegar

Instructions
  1. Preheat oven to 350 degrees
  2. Grease a nonstick 9 x 9 inch square baking pan with baking spray and line with parchment paper, leaving a 2-inch overhang on all sides.
  3. In food processor, combine all ingredients, except for the chocolate chip and blend until smooth. (about 3-5 mins)
  4. Add 1/2 cup of chocolate chips into the brownie mixture
  5. Pour the brownie batter into the prepared pan. Sprinkle with the remaining chocolate chips evening, over the top of the brownies.
  6. Bake the brownies until a toothpick comes out clean, about 30-32 mins.
  7. Allow the brownies to cool completely before slicing them into squares
