Overnight Strawberry Chia Pudding

This recipe only has 5-7 ingredients and takes less than 5 minutes to make. Blend it up the night before serving. Chia seeds contains soluble fiber meaning that it is absorbent in water. This will create a “pudding” texture. Soluble fiber promotes a healthy digestive tract by feeding the good microbes in your gut (prebiotics).

Ingredients
  • 1 banana
  • 2 1/2 cup fresh or frozen strawberries
  • 1 cup coconut or almond milk
  • 3/4 cup chia seeds
  • 1 tsp pure vanilla extract
  • 1 scoop greens powder (optional) I use Genuine Health's Greens+ O
  • 1 scoop vanilla protein (optional)

Instructions
  1. Combine all ingredients in a food processor. Process until smooth. Transfer to a bowl and refrigerate overnight. Divide evenly among bowls and top with chopped strawberries.
